Recipes: Spinach & Feta Rolls

Spinach rolls with feta are the perfect crispy pastries to serve for lunch or even a light dinner! Super simple to make, delicious served with yoghurt and mint sauce or simply as they are!
Ingredients
Make 12 rolls
3 Sheets Filo Pastry
50 gr Spinach
100 gr Feta
3 Tbsp Veg oil
1 egg yolks (vegan option: 2 Tbsp oat milk)
1/2 tsp sesame seeds
1/2 tsp nigella seeds
For Dip Sauce
2 Tbsp plain yogurt
1/2 tsp dried mint
Method
Preheat oven to 180C.
1 Crumble in the feta cheese.
2 Combine finely chopped spinach and feta in a bowl.
3 Place 1 sheet of filo on a flat surface. Brush with veg oil. Spoon spinach mixture along 1 long side of filo, leaving a 3cm border. Fold in short ends. Roll up filo to enclose filling. Transfer to a baking tray. Brush with egg or oat milk.
4 Sprinkle sesame seeds and nigella seeds on top.
5 Slice into 10-12 pieces (depending on how big you’d like your rolls to be).
6 Bake for 15-20 minutes or until pastry is golden. Stand for 5 minutes. Serve with yogurt dried mint dip.
Yoghurt & Mint Dip Sauce
Combine well yogurt and mint. Serve with rolls.
